Description : The foam production is launched by indigenous yeast and the grape’s sugar. Then the bottle are stored on slats, during 6 to 12 months. Then we remove the yeast deposit in the traditional method. No measurements are done during this operation, only a level adjustment with some of bottles of this wine.
